If I want to start watching this, should i really start with the older stuff, first Doctor and all? Or it doesn't matter much?

It changed a decent amount over the five years and Series 5 is also a great jumping on point. You can always go back and watch Series 1 - 4 later.
If you dislike both the 2005 series and series 5 you will most likely never like Doctor Who.
Yeah I'd recommend only trying the old stuff once you've watched a fair bit of the new and are sure it's for you. The old stuff is definitely worth watching but it's sort of an acquired taste.

I started with Series 5 in 2010 when the finale had aired a few weeks prior - when I got to the finale I was disappointed there wasn't going to be more until S6 next year because I absolutely loved it, so I watched through Series 1-4 immediately
I did not regret starting with S5 because I have a feeling that if I instead started on S1 I would've thought every single series was going to be like S1 quality and plot wise, which would've made me think the show was pretty bad because of the low TV quality of S1 and the cheesy looking monsters

I think it would be a better choice to watch them in order starting with Series 1 (With Eccleston) and see how the different Doctors change as it progresses. There are some things that just wouldn't have the same impact if you didn't know what had happened before, like the Day of the Doctor episode.

It's not that often I get so excited about a television show slowing down.
I've heard the series finale villain is a narcistic man in his 30s, who's bitter about his mediocre work not making it onto to his favourite TV show. He contacts the Daleks to take over the BBC television center and hold showrunner Ethan Doffat hostage until he replaces the title sequence with his own. Can the Doctor overcome this troubled man, or will the universe be stuck looking like a Michael Bay movie forever?

If he doesn't want The Doctor to be identified by clothing, I doubt Capaldi will will keen on catchphrase. I hope he doesn't have one, personally.
...and 12 doesn't strike me as the sort, either :v: Script readers can prove me wrong, but I think his most identifiable / recurring feature will be those eyes / eyebrows / the stare.

And this right here is why I don't regret watching the pre-screening version one bit.
Just seeing the finished product after a W.I.P version of it is sooooo satisfying. It looks amazing. I can honestly say it really heightens my appreciation for the art of it all. <3

I'm just imagining a dramatic moment towards the end of an episode, where the Doctor leaves a ship that's in the process of exploding. Fire everywhere, sparks, parts falling down all around him. He strides through the open doors of the TARDIS in the middle of the flames, the camera following him through in one smooth motion, as he walks towards the console.
"Doctor!" shouts the main villain. "You can't just walk away and leave us to burn!"
The Doctor reaches the console and turns around, with a frown that silences the protests immediately. Without looking, he puts his hand on the console.
"Fuckity-bye!" he exclaims, waving sarcastically, as he flicks the switch and closes the doors, before promptly vanishing off somewhere else.
