How, exactly? Tony couldn't even figure what Ultron was up to without help, that was the whole narrative thrust of the movie, the replacement for the entire Avengers cavalcade went bad.

The simple answer is that the suits controls aren't connected to the internet so he couldn't get into the system.[/sp] It's not sloppy writing, it's just not explaining every little thing to the audience. If you explained everything the film would just be constant exposition.
Not to say the film is perfect, there are plenty of things wrong with it, you just don't have to nitpick unimportant shit like this to find it. It's the Avengers 1 ear piece complaints all over again.

Most likely, but I trust Marvel with Spiderman than anyone else.
I found the entire love story between the two of them in the second movie to be so cringey and awkward.
The kid actually does gymnastics(even if its only stuff like flips now) which is neat, it just depends if they let him do his own stunts.
