When an animal dies, the body loses the ability to control the many millions of bacteria inside the body. So naturally the bacteria go nuts and start eating all of the tissue, which in turn start releasing various gases as the byproduct. Since there are no holes for the gasses to exit out of, the corpse basically becomes a bomb waiting for the surface skin, blubber and muscle to weaken enough to rupture and escape out of.
