It's obviously just to make bank on the vast majority of the population that follows a huge event like the Stanley cup when their home town is playing in the final (at least in Canada, can't speak for everywhere in the States).
Boston Pizza did the same thing in Quebec when they played Montreal, with certain locations temporarily renaming the restaurant.

Don't they have this kind of shit in America with popular sports franchises in playoff runs? Like for the Yankees or BoSox, or the Packers or Cowboys?
I personally think the idea is nothing more than "cute." It does not influence my potential purchase, but I recognize why it would for others and a business would not bother with the effort if it weren't resulting in temporarily boosted sales.

Vancouver fans are notoriously fickle. Seems like during the regular season people barely care about the canucks but once we're deep in the playoffs everybody is the biggest fan you've ever met.

Tell me about it, there are so many airheads walking around with Bruins jerseys on these days its hard to tell who's a real fan and who's just along for the ride. Not that I'm complaining about the jerseys themselves, I love seeing people sporting black and gold.

I can't imagine what it would be like in and around Toronto if they ever make a run like this one. No matter how we do, the stadium is always full and you regularly see people wearing the jerseys all year round. The sports section just wouldn't be the same without the constant criticism and overanalysis.
People around Toronto are shameless, though. Nearly everyone here is a Leafs fan except for those who want to be edgy, or happen to have moved here from somewhere else.
