Interesting thing is a lot of former Adventure Time employees have worked on the other shows(barring Gumball), but Regular Show and Steven both have AT allums on there and the creators of those three have worked on each other's show or worked together at some point.

arguing over cartoons
Uncle Grandpa has some jokes that will make you laugh but the persistent annoyances that it draws from having inane plot really drive away the love it has. If you pasted together a myriad of clips instead of episodes you'd have a lot more people agreeing with it being a "good" show.
Other times you get really random and unfunny episodes like:

I'll give you AT looking like RS and RS looking a bit like SU but I don't think AT looks a lot like SU. Adventure time has a super simplistic artstyle, almost all the characters have goofy spaghetti limbs and dumpy little stump hands while Steven Universe goes more realistic with its anatomy (at least compared to adventure time). The background art is also entirely different and isn't something you can see in the pictures you have used.

There are a lot of similarities, the long legs, the way the feet are drawn, the eyes, the very simplified faces, the way the characters are outlined figures. I'm no expert or invested but they look very same-y and not very experimental.
And it doesn't end with design.
The current trend seems to be superheroes and antropomorphic animals on magical quests.
Remember the 90's where urban life was the main theme of the biggest cartoons(Rockos Modern Life, Hey Arnold) granted they were NickToons but then you had Dexters Lab, Johnny Bravo, they were at least grounded in humans.

Just because they aren't human dosen't mean they aren't humanified characters. Hell I'll argue that they are WAAAAAAAAAAAAAAAAAYYYYYYYYYYYYY more relatable then say, a guy just trying to get laid. Like about a year ago, I remember watching this episode of adventure time where Jake had some weird sort of world inside of his body, made of him. Eventually he had to choose between keeping the villagers alive but whilist him starving to death, or killing all the villagers by coming to the real world it ended in this really powerful scene where[sp]his inner world best friend knocked out the guards who were keeping Jake from leaving, and telling Jake to just go. Then he rose to the top when all of the villagers were screaming while being sucked into his body. It ended with him and Finn, and Finn asked him if he was hungry, and jake, judging by his basically genocide, said he didn't[/sp]
I'm not saying that there weren't human characters back then (I mean look at Hey Arnold), but considering some of the shows you refered to are an evil kid who tries to do evil experiments, and a guy just trying to get laid, with nothing differing from those subjects, I think that just means you should get off your high horse.
I feel I could probably try watching this show if it weren't for the atrocious character design/visual aesthetic.

the unattractive character designs sort of comes into play of the show's theme about overcoming flaws and stuff.

Concerning modern cartoons trends, I'd say Clarence takes a break from it story-wise since it's set in a somewhat down-to-earth urban setting.

I'm just saying that shows back then were more centered on youth urban life problems and situations, not only in "monster of the wekk" episode theme(I'm sure the current ones do that too) but also in theme and design.
There's Ren and Stimpy(not human but clearly every episode had strange social commentary) for example.
With the noodly-arms cartoons it's very often some kind of monster/wizard thing. That's my impression.

The only cartoon on in the past 10 years that had a monster of the week formula is Adventure Time, and even then it grew out of that. Everything else deals mostly with stuff like character development and world building (or it's just 100% comedy-based insanity).
