So the girl who may or may not be my girlfriend decided to spend her ex's birthday (two days after they "officially" broke up) together with me instead of him.

It's your decision in the end man but I just wanted to say that you're dealing with this very maturely, and that in itself is respectable. My 2c? Unfortunately similar to what I assume is your gut feeling; she's lost interest and is just trying for some damage control. Don't make any rash decisions, but don't let anyone string you along. The saying is cliche as fuck for a reason, "Don't make someone a priority if they only make you an option."

I had a really nice woman at work offer to pick up my shift even though she had a hangover. I owe her. So Instead of working all day, I only needed to do half of one. I would recite a mantra of all the ingredients of the food I was preparing when I started to shift thoughts towards what's going on, and it worked really well.
And I hadn't heard that phrase, Dark_Light. I've always kinda thought that, but that's a much more concise summary of the thought. I feel like usually the motivation for that kind of thought is self-respect and that semi-angry feeling that goes with it sometimes which is entirely justifiable when someone does you wrong. But for me, it's more of I don't want to keep being around someone who I care about if they don't care about me, because it can only be unpleasant for them. I don't want to make it unpleasant.
