Get the fuck out of there. When I started dating my first girlfriend most of the time all she talked about was her ex-boyfriend. It's one of those red flags that I just chose to ignore. I myself climb a fair bit and I can understand why you'd be upset about her spending a fair chunk of time alone with her ex and in defense but also against your post, a good climbing partner that's a match for you skill, ambition and trust wise is difficult to find, I know I'm only willing to push myself when my second is someone I trust.
Talk to her about it, tell her you aren't quite comfortable with it and perhaps be brave and ask her to take you climbing and teach you so you can second her. It makes for a very good bonding and trust building exercise.
