i made a thai green chicken curry earlier. it was some pretty ghetto curry paste. juice and zest of three limes 3 green chilli peppers 1 red chilli pepper good sprinkling of ground turmeric onion, finely chopped 2 cloves of garlic 3 or 4 kaffir lime leaves 2 stalks of lemongrass, chopped a good amount of fresh coriander (stalks and leaves) and the same of basil a good slug of olive oil then ground in a mortar and pestle, a good amount (probably about 1-2 tbsp) of coriander seeds, about a 1tsp black peppercorns and the seeds from about 12 cardamom pods. chucked all that in with the other curry paste ingredients and blended them all together. then marinated chicken in that curry paste for about half an hour, fried off the chicken with a chopped red + green bell pepper, banged in the rest of the curry paste and a can of coconut milk. it tasted pretty damn good, had it with rice.
