Sylars powers was(atleast partly) to know what makes things 'tic' so, it may just be an indication that he has Sylars powers, and with them also that hunger for powers, not necesarily that it was Gabriel that shined trough.
That's what I meant by my last sentence there; that whether it was just the power's influence over Nathan, or whether Sylar still had a presence, I feel it will continue the cycle etc etc
The way I see it, Sylar [I]is[/I] the power, and the personality, Gabriel is the one who was removed.
So when the power is in control he calls himself Sylar.
I don't think it's related to Sylar (the character) so much, than the power itself.
Remember when Peter had the power? He had the same hunger, and that wasn't due to Sylar's personality.

"Sylar" is the branding on Gabriel's watch. As "Gabriel Gray" he feels he is a nobody, weak, and useless. As "Sylar", he is well-known, and a powerful man. It's like an alter ego. Clark Kent is a humble, overlooked reporter, but Superman is a powerful alien that saves the world at almost a daily basis. Superman gets fame and power, values much desired by many people.
When Matt overwrote the "Gabriel Gray" and "Sylar" personalities, he simply erased the memories and experiences of Gabriel and his role as the serial killer "Sylar". It's like reprogramming an android to be someone else. The problem with Sylar is that Gabriel hides behind identities, as shown by his statement "I Am Sylar". He frequently flits through personalities, and he can change his body to match those personalities. His body was the anchor to his original personality, and he expresses distress at his body's gradual removal of that anchor. Remember when he woke up and ripped out a tooth from his mouth? He got really pissed about that. He changes to his mother's form to ask for advice in the face of strong opposition and lack of knowledge about his current circumstances. His dissociative identity is like a keyhole for anybody "reprogramming" to fit a personality into. Remember Mohinder's statement toward peter as he prepares to test the incomplete genetic modification formula on him? "Your body is primed to accept abilities." Sylar's mind and body are primed to accept personalities.
Intuitive Aptitude gives its user the ability to quickly understand difficult things without former knowledge. It creates a "hunger" for knowledge, which most people have anyway, but at a greatly reduced rate. They have to study for years to understand extremely difficult subjects, whereas an evolved human with Intuitive Aptitude can quickly and easily grasp and master such subjects.
Sylar wants to know what makes the evolved humans tick, and how their powers work. His only solution to this question was the removal and study of an evolved human's brain, which almost always results in death. Claire Bennet was a notable exception, in that he stated that he cannot kill her, and she almost completely healed from the theft of her power, with the only adverse effect being the loss of her ability to feel pain. Pain was the only thing that Claire thought that made her human. her ability to feel pain came back when she temporarily passed away during the second eclipse.
Back to Sylar, Intuitive Aptitude lets him comprehend another's pain and copy their ability through emotions and empathy, but it took a while. He became addicted to instantly and mechanically understanding how someone else used their ability, and he used that knowledge to adapt his own body and mind to accommodating additional powers. It's kind of like studying for years and finally achieving enlightenment, or mastery of what you study. Sylar studies for about a minute or less, and achieves this enlightenment. He tried to quit cold turkey by copying emotions and practicing with an old acquaintance, Elle Bishop, but ultimately succumbed to his addiction and killed her, but did not take her ability, as he already did.
Peter has the ability of accelerated empathy. This empathy was quick and so strong that he could copy powers using it, and recall abilities by recalling that empathy. His body seems to have abilities embedded into it, as when he lost his memory he still was able to use powers. This is what may have caused the "priming" of his new ability, Ability Replication. When he absorbed Future Gabriel's ability of Intuitive Aptitude, he gained the ability to understand empathy and other things extremely quickly. He absorbed it, killed his future brother, and traveled back in time to force Sylar to tell him how to suppress the persistent hunger for knowledge of the unknown, namely others' abilities. He attacked his mother, and tried to kill his father. it seems that Intuitive Aptitude overloads Empathic Mimicry and causes the user to have even less willpower over the "hunger" than before.
