I don't recall the movie ever making it clear whether they live or die, and furthermore, who even won the war.
They only say in the epilogue "In time, this war, like all wars ended."
Although, since Partisan rock was turned into a monument, I'd assume the US won, or at least took back that part of their homeland.

That's because it's the PLA insignia, kind of like the US Marine Eagle, Globe and Anchor. Did you expect to see the PRC flag? I did too.

In the original Red Dawn, the initial invasion force didn't bring any light vehicles, so the bulk of their light vehicles were re-purposed civilian vehicles. Most notably, the mayor's car(Pictured below) was repainted and used as a staff car.

Originally, I thought that the budget prevented them from mocking them up as Russian-made vehicles,but later in the movie, you can catch a glimpse of Land-Rovers mocked up as Russian UAZ's. This proves not only that they have a big enough budget to modify a vehicle like that and maybe give it 3 seconds of screen time, but also that the use of American-made vehicles is deliberate for the sake of the setting.

I never noticed but it makes sense and it makes me love the movie a bit more.
There aren't alot of war movies that are accurate but this one was one of them.

It is a bit selective, and that is not a good thing. However, it is just a movie. Even if the motives behind it are not necessarily honorable, it would still be appealing to see the idea you stand behind be portrayed as a successful one. Even if it just a facade for a more imperialist cause, it's still nice to watch if that's the political idea that you follow.

MY favorite part of the original was when the teacher walks outside and gets fucked up by a paratrooper.

This is all true. Both in the new and old the invaders make use of American military and civilian vehicles and equipment, as it's very hard to sneak Type-99/T-80 onto a mock civilian aircraft. Infact, much of the equipment in the new film is purposely American equipment with the PLA Occupation flag-star slapped on.
Also, the Russians will play a role, as some of the actors are playing Russians.
