The BBC has coverage of every event (excluding qualification), with catch up on their site. The streams are all HD afaik as well. If you really want to watch them it might be an option.

Nobody cares because these are sporting medals and are therefore of no relevance to real life.
We have a vague interest but beyond that we're not stupidly patriotic over shiny bits of metal.
However North Korea will cling onto them as evidence for national prowess or Godlihood or something, so they've probably invested a lot more money and time into training their athletes to the detriment of their citizens.
I guess you could say we have a sense of perspective.
