Since the project is open source I might give it a go and port it to UE4 for shits n giggles.
The reason it looks so rimlighty is becuase he did a straight port to unity 5 from unity 4, and that's the standard shader with it's effects not tweaked for a non-pbr material.

I was going to go buy six copies of Mario 64 but then I found this and chose to play it instead

I'm sure they'll continue selling the exact same thing over and over for every platform they make.
i'd say this is copyright laws fault if anything. a big problem with the industry now is these big companies need to protect and actively keep their properties safe, or else their product will go into the public domain because it's commonplace. it's the kleenex issue basically, and they're only holding onto that brand by a thread.
i remember a long time ago seeing a poster game shops were putting up in their stores back in the 80s telling consumers that their product was the "Nintendo Entertainment System" or "Nintendo Entertainment System Cartridge/Game" and not a "Nintendo." that's how protective they are, and with good reason because mario is such a protected and important character to their brand. i mean, we aren't the dumb consumer but trust me, i guarentee at least 10% of the people who watched that video (with a million views it's not that hard) and thought that nintendo was making an hd remake of mario and this was it (i know quite a few) because they took it for face value, and of course nintendo want's that to be very clear to the dumb consumer that this is not their product.
also beyond that he was distributing copyrighted assets (music, models, etc were taken from galaxy)

i mean shit man, if nintendo can barely let DISNEY, a company with multiple global theme parks and brand recognition up the butt, use their character in a licensed movie (wreck it ralph only got a spoken role of mario, while [URL="http://i.imgur.com/Ehrdezd.jpg"]bowser got an on-screen role[/URL]) then obviously nintendo has a LOT of reasons for keeping that shit in their pockets
