From my experience, they just feel better. Some have a nice curve to them, others go straight as an arrow. A lot less variation in quality or control compared to just grabbing an alley ball. This also allows you to get a feel for the ball and progressively get better the more you use it as opposed to learning your ball's control on the fly then putting it back and getting a different one the next time.
I used to work at a bowling alley... That's about it.

They're made of a different material. Alley balls are usually plastic, rubber or urethane. Those materials don't hook a lot. The expensive ones are made of resin. They are literally made to hook and hit the pins harder, causing more pin action.
