I'm guessing it wouldn't taste very good. I actually tried making a brownie variant as you proposed once upon a time and it didn't turn out that well. Turns out that hot cocoa mix doesn't have much flavor to it when you use it for baking purposes. Maybe if you have a crapton of mix it might work out ok, but I doubt it.

1tbsp oil
3tbsp water
1tbsp cocoa
3tbsp sugar
3tbsp flour
1tsp vanilla
bit of baking powder (about 1ml)
