I thought about it, but my field requires full seal goggles, and it's a bitch to look down any low sights because I can't rest my cheek against the stock. Do the EOTECHs sit low?

Just get a sight riser.

I'd get an aimpoint with the picatinny rail mount, it raises it just above the front sight, easy to use with any goggles.

I've tried to do research and I cant figure out diddly shit.

I'd avoid full face masks. I'd get some nice Arena or Revision goggles, and a brassguard. I'm sure that the fields would allow that.

Full face masks suck no matter which you buy. They're meant for paintballers who don't use their ironsights regardless of whether the gun has them or not.

Cut the cheek off the mask? Why go that far when it's easier to wear an iron-face/brass-guard/shemagh and actually aim their damn weapon?
