Gordon had a show called Gordon Behind Bars, where he worked with inmates in a prison. Some of them were released and were actually given jobs in restaurants by him. He's also pretty gentle with the prisoners throughout the show.

Late, but there's another reason behind this.
In HK, Ramsay only tends to yell at the customer if they come up to the hot plate and complain rather than informing the waiter. It essentially forces Gordon to drop everything and focus on them (doesn't help that they're impatient about it half the time) rather than getting things sorted in an orderly manner. Note that in the scenarios where the customer informed their server so they could bring it to Ramsay's attention, he goes right to grilling (hah) the chefs instead.

My family was in Woodland Park the same time he was at Mangia Mangia. We tried to get in, but some production assistant told us we couldn't. After watching the episode, it was probably for the best
Ramsay seems like a decent person, but the US TV shows make him seem like an evil tyrannical asshole who's hell bent on making people feel bad for fucking up fine dining food.
