If you've got a problem with what you're eating, tell the wait staff, they'll take it to the kitchen staff and inform them. Bypassing the whole system by just walking up to the kitchen area yourself and bothering the kitchen staff who are busy serving everyone else in the restaurant, just to deal with your little problem, is both incredibly entitled and rude.
I've been watching a lot of Hell's Kitchen (6 season in a little more than a week), it seems like Ramsay doesn't really care for executive chefs too much. And holy shit that, 6 and a half seasons of Hell's Kitchen in about a week. What a consumption of time.

Milk also makes them end up very light and fluffy. I for one wouldn't want that much sour cream in my eggs.

Also it has less of a tang than sour cream, so it's not really going overboard. I personally use milk too though as I prefer the light and fluffy and can't afford to go overboard on ingredients.
