Open carry is great, what are you talking about.
In my state, the only legal way I can carry a firearm to defend myself is through open carry. I am not 21 so I can't conceal, but anyone who can own a gun can open carry.
Also, you are right that open carrying might set you as a target, but really, there is no statistical evidence for that, and a lot of people think that open carry acts as a deterrent. If some asshole wants to rob a place, walks in to scope out, and sees someone carrying a firearm, they probably aren't gonna think "ho shit, I gotta take that guy out first". They are going to think, "ho shit, there is a guy carrying, I don't want to murder someone if I don't have to. I'm going to come back when this place isn't so hot". It makes sense to me that most criminals don't want to kill someone. They want money. They are going to rob the place that will give them the least amount of trouble. Open carrying doesn't put a neon sign over your head. Even though it is open carry, it doesn't mean it isn't discrete. I have a holster that keeps the gun quite close to my body, keeping my profile looking normal.
And, as far as people OCing for a fashion statement, you must not live in a place with a lot of open carry. In my area, the most popular open carry weapons I've seen are the full size glocks. And they aren't carrying on a drop leg holster either, so you can go ahead and throw that "open carrying weaboo" notion out the window.
Finally, open carrying allows you to defend yourself with a larger firearm that is easily accessible. I don't know if you've tried concealing, but getting a small pistol out of a IWB holster or a pocket holster is a lot less easy than taking a 1911 out of a hip holster.
Sure, when I turn 21, I'll probably almost never open carry, but at the moment when I'm on my motorcycle and can't keep a gun in a glovebox, damn right I'm going to have one on my hip.

Most robbers aren't looking for a fight, they just want a nice easy score, that will get them in and out, with their money and limited trouble.
Shooting someone escalates everything, and immediately gets you into hot water.

Infantry one-station unit training, Fort Benning, GA. I was assigned one of the two SAWs for my squad. Tried to run STANAG mags through it several times, never got off more than 5 rounds before it had a near-catastrophic double feed. Worked well with belts, though.

Some people were going to rob a diner but saw some guy with a gun on his hip so they sat outside to wait for him to leave, a cop saw them sitting in a car with guns and arrested them.
Yeah, when it comes down to it people usually think along the lines of "I'd really rather not mess with someone who may kill me." rather than "I can totally take him easy."
I open carry on occasion, but only when I'm headed into a strange area. I live in a small town, most of the problems exist in the Boise area with all the urban development. Not surprisingly a lot of it has to do with meth.
