Morrowind is my favourite TES game to go back to. Not for nostalgic reasons (since I got it in maybe 2011), but because I have done sweet fuck all in that game, and I really enjoy the atmosphere and intrigue. I have played it a fair bit, but I still don't really know what's in the north half of the map, because I've never really needed to go, as all the major cities lie on the south coast. Besides that, fighters and mages guild are really just 1-off quest centres with no discernible overall plot. Part of your advancements is actually training your skills, rather than just doing quests, so I haven't finished any of them. In the same vein, the main quest isn't even accessible until you're strong enough, and you're told to go train in mages and fighters guilds, and doing quests until you're up for it. So in a way everything in the game contributes to the main quest. It's more of a grind, but that keeps it interesting for me.
If we are back at the topic for sleep, I go to bed at 5am and wake up at 1pm.
Even if I sleep at 10pm, I'll still will wake up at 1pm

Morrowind's my favorite too, it saddens me most people don't stick with it because of the dice rolling combat system. You can actually hit stuff without a problem barely an hour into the game if they'd just keep their fatigue up and use a weapon attributed to their highest weapon stat.
Morrowind has the best magic system in a TES game to date considering how much crazy shit you can do with it, casting levitate on target is pretty funny.

To begin with I couldn't muster the patience to stick with it either. And then a friend who was familiar with the game told me: Use a spear, and go into gameplay options and switch "always use best move" on, so that the player will always do a stabbing forward motion with the spear. Then suddenly it's much much easier, and you deal a lot more damage when you do hit, enough to warrant the misses.
Magic-wise, I haven't actually given it a go. I'm a pretty impatient person really, and I've never used anything but destruction magic in any TES game, and hardly ever in either Oblivion or Morrowind. Skyrim is definitely my favourite game for magic, because I'm actually more encouraged to use it.

The problem with Skyrim's magic system is that spells are static, there's no way to boost their damage outside of the two augment element perks, and brewing constant fortify (spell school) potions which is impractical. As a result, it feels like you're doing nothing but tickling enemies when you're level 40+, thankfully I made my own mod for Skyrim to fix that.
Bethesda massively oversighted the lack of damage upscaling considering how literally every other playstyle can upscale their damage except mages. The impact perk is also stupidly overpowered and makes the combat even more boring than usual since you can just stunlock everything till it dies slowly. Skyrim does have the best visuals for spells though, bar none.
As for Morrowind, mage is kind of awkward because there's no magicka regen like there is in Oblivion and Skyrim. I always play Breton with the Apprentice birthsign so I have a big magicka pool, the penalty from Apprentice is nullified by the racial resist magic passive. Atronach is also a good birthsign to do as a mage in Morrowind.
It's worth to do more than destruction too, alteration has flying/jump spells and conjuration has some pretty absurdly powerful summons.

I loved in Morrowind for spell creation. Making broken spells that would turn you into a god.
While Arx Fatalis was clunky as fuck, I sure enjoyed the gimmicky spell casting.

I haven't finished Fallout 3 or Skyrim. I tend to get distracted by side quests. Then get bored. Or in the latest case of Fallout 3 get killed repeatedly by the big bug things whatever they are I forget.
