Except it's proven through application of these processes. We know the theory to be correct by making predictions about what will happen during chemical synthesis, and then applying them.
How do you think teflon works? They made predictions on what attributes the polymers they were working on would have, and how to attach something so slippery to a surface. The application of it proves the theory behind it.

Alchemy was really weird, they were trying to do science, but without the empiricism and philosophical underpinnings. As well as without proper experiments. It worked sometimes, but not reliably at all.

Philosphy was similar to science back in the classical era, since they didn't have the scientific method or proper tools, it's like a very basic type of science.
The idea is the same, find truths using implied data.

Thus why it's protoscience, it was before the scientific method and they didn't really know what they were doing, but they were attempting to deduce the nature of the world anyways.
