Anything Dean Koontz, especially Velocity or Odd Thomas.
Any of the books from the Xanth series by Piers Anthony and the Legend of Drizzt series by r. A. Salvatore would make good movies if done right.

The Wheel of Time series would be incredible as a movie, but realistically it's very hard to pull out. It's not only damn long, but much of the plot in the books is explained inside the character's mind, so it would probably get spoiled in a movie.

That is the only Stephen King book I've found that I actually enjoyed reading. It would make a pretty decent movie.
