Please don't waste your money on an RX-7 if you're going to ruin it with a V8. Getting an LS1 in an RX-7 is like getting a 4 cylinder in a challenger...It just ruins it. If you can't appreciate the car and what it's famous for, there's no point in buying it. That and with the fucked up weight distribution (it was designed for an engine you can pick up bare footed with shorts on...) and the power of a V8, you'd probably throw yourself off a cliff. It's a track car, not a drag racer. And besides, I'd have to agree with Brad, even in the beautiful shape she's in, 7 is a bit much. But i promise you, if you were to ever buy an RX-7 and actually try the rotary before you diss it, you'd never go back. I never will. That and the handling is just indescribable. Just amazing fun.
A full aluminum LS1 with the plastic intake and a t56 weighs as much as a 13B-REW with all the accessories and the tranny attached to it, you might gain about 50-75 pounds total from the swap.
The LS1 is an incredibly small and light engine for what it is. And the 13b is a heavy bitch for what it is.

Hondas and Toyotas with care can get like 350,000 miles on them. I don't know about Volvos, but the S70 looks promising. BMWs are nice for their interior.

S60s aren't as reliable because ford, but if you really want to go that route, S60R all the way, 300hp AWD 6 speed.
