Every American car my family has owned has had significant amounts of problems near the 110k mark, so I'm kinda offput by them

We generally get 150k-160k out of our cars before major problems come about and even then thanks to proper maitenence and car internally the major problems arn't really major at all.
Take it this accord we bought had a previous owner who didnt give a fuck and that model already had tranny issues. We've spent about 4-5k on it this year and it was bought two years ago for 2k. Including all the other repairs we literally spent like 7k on this damn thing.
Our pontiac on the other hand just had its water pump go just under 100k, couple hundred later and tadaa new water pump car runs amazingly no issues. We bought it new and take care of it. It's about previous owners and how it was taken care of. Everytime I hear an american car go down after 100k-120k miles it's cause that owner tried to skim an extra thousand miles or more out of an oil change or didn't change spark plugs at the required time or let the valve gasket get old and have oil leaks going for weeks or months.

I'm more pointing to the fact that out of all RWD cars a Mustang for example would be a bit of a hassle to drive in the snow

How do I identify squeaks and creaks in the front end of my car?
When goin over bumps i can hear like a chirping noise, a bit like metal on metal kind of thing.
It does it under heavy braking too, and when going through a turn sometimes.
also, how do I check my rear brakes? I have disks up front, those are easy enough, but I have drums in the rear.

Sounds like it could be a broken spring to me
for the rear brakes you have to take the wheel off, then take the drum housing or whatever you call it off and then you check the brake shoes.
I'm looking at competition cams for the GTO, and I really don't know much about the specifics of what I should be looking for.
I know aftermarket cams will require me to change the timing.
What do lift and duration mean as far as difference in performance?
I want that classic muscular idle and a good rpm range, not too worried about emissions or fuel use, as it will probably become a track car.

70k is about when you should replace a timing belt on a Honda, whoever sells you it is going to probably lie that it was changed and then 30k down the road when it snaps you are going to blow up the motor.
Dealers are literally there to fuck you over, the one I bought my car from assured me that my timing belt was changed and 7k down the road at 110k the top quality honda belt held through to stretch just enough so that it misfired on startup. Lemon laws are only there for brand new cars I'm pretty sure anyways since you know all used cars are sold "as-is". However, a private seller well attempt to make his pile of junk look like solid gold so that you buy it. Keep your eye out for cars you are looking for, don't rush and JUMP on that really nice one which you finally find.
Caravans are also pretty much known for being junk, it's his fault for buying a piece of shit which rotted away for half of it's life. There really isn't such thing as a cheap car, older cars are cheaper things begin to slowly break and new cars are expensive and if you are lucky they don't break for quite a while. Finding a car with 70k is going to put you in $12,000 territory with all the single owner cars that people are trying to get top dollar for when they really aren't worth that much.

Also if you are 18, go around to all the car lots and express how much you like a car and would like to test drive it. Almost anywhere will throw you the keys if they think you want to buy something and it gives you a chance to get some time behind the wheel of different cars you might buy. If you aren't 18 convince your parents to test drive cars for you and let you try them out.
