actually the color is just preferred by Lucas to differentiate the characters for the dumber audience members out there.
Lightsaber color, girth and length is decided by the type of crystal used in the construction of the saber, and lots of sith had lots of preferences, and due to availability, sometimes the size blade you want doesn't come in the color you like.
