• Why don't old guys grow their beard and hair?

I agree.
When they were younger, you had to shave or it was just improper.
1) They're either bald, or going bald 2) They want to look younger 3) Will make them look like a hobo, not a stereotypical "wise old man" or norse viking or whatever.

Usually by that time in life, you don't care what you look like. Life becomes about simplicity and ease, and long hair is neither of the two.
