Black Lagoon, Bakemonogatari(really fucking awesome one that's almost entirely dialogue), and Hellsing.
Bakemonogatari has some of the best animation and story I've ever seen in anime, it's amazing.
Ghost in the shell is good. Like most anime, it has some moments which you consider asinine. There's some moe crap relating to the robots, and some relatively rare mild fanservice, but other than that it's pretty good.

Cowboy Bebop and Samurai Champloo are definitely not bad. Also their English dubs are fantastic and not at all "awkward" like the average anime's.

I can't believe it took half a page for someone to mention Evangelion. Fantastic series, although it is fairly slow-paced (until the last 8(?) or so episodes).

The latter starts off very silly and light-hearted in the first couple of episodes, but it all turns into an awesome sci-fi western with a pretty great storyline, and some touching moments.

It took that long because everyone else has realized how not very good it is.

Gankutsuou, Planetes and Flag are rather short and nice series.
Gankutsuou is the anime version of The Count of Monte Cristo, however I believe even someone that didn't read the original can enjoy this one, mainly because the characters and the plot weren't copied one-to-one.
Planetes is a mixture of comedy and later on romance about space refuse removers, but focuses more on the character's personalities and their dreams and motives.
Flag is a realistic approach to the mecha genre.
The main character, a cameraman, is sent into a a small Asian country where a civil war broke out in order to record the activities of a UN strike force, created to retrieve a flag(hence the title), a powerful symbol for the cooperation between parties involved in peace talks.
Monster and Legend of the Galactic Heroes on the other hand are quite lengthy 30 hours / 50 hours respectively and therefore focus more on storytelling rather than high quality animation.
I've started to watch them after seeing pretty much everything that was mentioned in this thread and wouldn't recommend them to someone who just wants to see some quick action.

I'm seconding Baccano! and Gurren Lagann. These two are pretty excellent anime, especially Baccano!.

IMO you'd have to be stoned to like it.
Looks bad to me. Everything is unappealing to look at. You know art doesn't just apply to the way things are drawn but the way they are coloured right?
