Shounen basically means it's targetted to younger males (not necessarily primary school...up to 18 or 20 years old approx) but that doesn't mean other people can't enjoy them, for better or for worse. Heck, anime is made with a Japanese audience in mind but that doesn't stop other people from enjoying it. What you might want to avoid are the shows tailored to stay on air for a long time in order to increase its merchandising potential. You'll know them when you see them.

I just finished watching The Girl Who Leapt Through Time and highly recommend a watch, what a masterpiece.
I remember watching .//Hack, it's not half bad of a series, but towards the end the main charchter turns pratically into a baaw'ing shit, and sorta gets very asinine.

Afro Samurai - Straight up action. Hilarious voice acting by Samuel L. Jackson. Worth watching for shits. Cowboy Bebop - Nothing about this anime is bad. Should be a first priority watch. Ergo Proxy - I guess it has a bit of Blade Runner in it. Can be really philosophical even if you don't realize it. Download from Shinsen-Subs for cool explanations after each episode. Ghost in the Shell - Recommended all over. Stand Alone Complex specifically. GunGRAVE - One of the better, if not depressing, anime I've watched. Like mobsters and supernatural stuff? Watch this. Gunslinger Girl - This is the most depressing anime I've ever watched. Great series, fucking dark as shit though. Hellsing Ultimate - Great supernatural, vampires-fuck-shit-up-hardcore show. I don't think it's fully run though. Kara No Kyoukai - Great mystery/supernatural anime split into six movies. Has the best single episode I've ever seen in an anime. Outlaw Star - Futuristic gun slinging anime. Really good show. Has style. Paranoia Agent - Extremely bizarre, really mind fuck-y. Maybe a good watch. Depends on your tastes. Big O - Been a while since I've seen it and I never saw the second season but I remember liking it. Has a bit of a noir style. Mobile Suit Gundam: The 08th MS Team - Not your stereotypical Gundam series. Probably the most realistic portrayal of Gundam's. Fate/Stay Night - This is probably the most "standard" anime on this list but I thought it was an alright watch.
Just saw an animated movie called Metropolis that was inspired by the 1927 Fritz Lang movie. Tengen Toppa Gurren Lagann - this anime is just pure awesome, it's a parody though but it's not stupid Hellsing ultimate - Tons of action/violence, it's a vampire anime but it's not the pathetic sort Those two are definately worth watching. Hellsing Ultimate hasn't finished yet though.

The first episode gives you a lot of information at once that seems kind of random, but don't worry, the rest of the episodes really tie it together in a way that makes sense.

It's enjoyability is dependant on how much a person appreciates the campiness of a show. Nonetheless, I think your diagram has made its point.
