I don't know why it works the way it does, but it's not a real problem because you can either:
1 - Disable it completely
2 - Not have your computer running 24/7
if you do either of these things, you'll (probably) never see it.

Because the it was never designed to do so. Its as simple as that. What your asking, isn't exactly trivial. Especially in a system that is as entrenched in legacy support as Windows.
I'm sure if it was "that easy" they would be pushing for the feature in the next version of Windows Server as a MAJOR selling point. It may be in the works for all we know, but its nowhere near ready since the Tech Preview for Server 2016 is already out and haven't mentioned it.
Just because it would be difficult doesn't mean they shouldn't implement it. If even the server versions of Windows can't have a feature like that then it isn't a surprise that their server market share is so low.

I personally go automatic, but I always note the "Updates Scheduled" notification, and reboot anyway when I'm ready, ssd means it's not a long process and I go out and make a sandwich or something
As a user living on the bleeding edge, the updates aren't imporant for me because they have something small, but actually because the bugs in the previews
Why does everyone have such an issue with updates?
Just install them they're usually security/performance patches what's wrong with that

The process is very intrusive by default and if your PC is doing something it can ruin that.

I render things that last several days, sometimes more than a week. 3D animation and rendering is my hobby.
But when I'm not using my computer, I shut it off.
I've never had a render cancelled by an automatic update.
As for servers? Get a yourself a little server machine. Usually they don't need to be very powerful.

That won't completely solve your problem, tho.
Windows 10 isn't even seen in the video. I just set Windows 8 update to notify me on my lock screen when there were updates available and I installed them when I had a few free minutes.
