Weird blobs like that can form in vinegar over a long period of time. Vinegar does form in apple juice; that's how you get apple cider. We have something like that in our basement too.

It's probably this. Ginseng roots are wood, and wood can expand quite a bit in 30 years.
Ginseng has a distinct smell. Open the bottle and you'll likely know right away.
