Lindybeige has some great videos. I recommend watching the one about shields, as the forearm strap on every shield ever seems to be an extremely common misconception.
I don't mean to be a prat, but my English teacher had a replica sword (I'd assume it was a replica anyway) with some sort of imitation leather sheath that he kept as a kind of fun thing to do for classroom readings of plays and whatnot, and the sword DID actually make the sound when unsheathed quickly. I suppose that doesn't necessarily make it true for real swords of any kind but the point stands, it's not impossible.
EDIT: And as for not-so-scientific conjecture I'd say it was probably something to do with the cheap nature of the metal, flexing and wearing against the scabbard when drawn, but it did make the sound regardless.
