Well can anyone help me out? I'm looking for some Melodic Death Metal, but that sounds more unique than the majority of the mello-death/metalcore that you hear around the place. Anything similar to Opeth or Katatonia would be fantastic. Although I also like me some Bloodbath.

If you want bands like Opeth, then I suggest you search for "Progressive death metal" or "progressive melodic death metal" on the Encyclopaedia Metallum.
For bands like Katatonia, I suggest you search for Gothic metal. Don't really need to incorporate the "death", since a lot of Gothic bands incorporate death metal elements.
Some progressive bands I would suggest that sound similar to Opeth:

Anaal Nathrakh's later albums have some of the best fucking choruses ever. Incredibly badass. Brutal and heavy as fuck, but very melodic.
I hate those parts in metalsongs where it goes from badass to gay for a while. Not in that song, really. It just brought it into my mind :v:
