I have an 8gb iPod Touch. If you plan on having a lot of apps or jailbreaking it, you should definitely get more than 8gb. I wish I got more, with a jailbreak and my music I have almost no room left.

You just download blackra1n and run it while your iPod is plugged in. It takes around 10 seconds, restarts your iPod, and it's done.
Although since I have the new iPod and they haven't updated blackra1n for the new version yet, you can't turn off your iPod. If you do, you have to run blackra1n on your computer again. Nothing gets deleted, though. You just can't restart your iPod if you're away from your PC.
