When I'm asked to do something stupid I tell the teachers "I'm doing it this way, and if you don't like it then I guess I'll just deal with having an F."
In my English class, for example. According to the MLA standard we're supposed to write little sentence fragments on our note cards for research. The little OCD in me refuses to write a sentence fragment on my note cards, so I go all out and write a well formed sentence so it's easier when I transcribe my facts onto paper.
I was told that's not how I was supposed to do it and I told my teacher that she's just going to have to deal with it and went in depth on how I can't write a fragment. She was like "Well okay fine."
Sometimes I think stupid assignments like the ones described in the OP are just created to test people. To see how many people object and how many people follow, seriously.

I also find it ironic that some teachers are complaining about violence among the younger generations and they assign garbage like this to their students. I also find it even more ironic that we are told not to do crack cocaine and the next day we're all in an assembly where a man tells us the exact temperature needed to inhale crack and receive the best high from it.

My english teacher freshman year is the administrator for this club that's all about raising awareness on crises around the world, like floods and hurricanes that devastate communities of people.
So in my english class, she handed out this massive packet about twelve pages long stuffed to the brim of all these questions not even related to grammar or literature. The packet pertained to the school that Oprah opened in South Africa. The one that's strictly for girls. She made us watch this video over it.
I refused to do the packet. It wasn't because I didn't like the video or thought the school was a stupid idea, but because I'm in a fucking english class and I'm there to read Romeo and Juliet or the Odyssey, not learn about a school for girls opened up in South Africa. I can learn that elsewhere. Hell, I can go to your fucking group meetings that you sponsor and flail around the school if I want to learn about it.
I was penalized heavily for not doing an assignment that I shouldn't have even gotten in the first place. Thank you, freshman year english teacher. Thank you for ruining my transcript for being a shitty teacher.

And finding the X in that triangle is a vital aspect in a lot of forms of engineering.
One other thing I have to put my two cents in. This year, at the end of every quarter, our third period class gets switched so we have something different for eight weeks. I found out I have gym, which is fine with me because we get dodgeball every Friday (I'm a fucking master at dodging, but I suck at throwing), but every one or two days we also get sex-ed. I have a problem with this because I already learned everything about sex-ed two years ago, and even then I found it irrelevant because my parents taught me everything when I was five years old. Seriously. And they weren't like those squeamish parents who tell their kids it's from the stork or some shit like that, I was given every bit of [i]real[/i] information I needed. It's useful and sometimes interesting having parents in the medical field, especially if you're planning to get into medical school someday. I'm hopefully gonna have them write a note for me to hand in so I don't have to take sex-ed simply due to its irrelevance to me. It's so much fun being a smug bastard at school, and my friends usually find it funny too.

Talk to your parents, explain that you feel this is shit compared to what you and they had to do. Get them to complain to the principal, if that doesn't produce results then have them complain to the district.
The problem is not that the teachers do not teach well but rather that teachers who do not teach well have no oversight into if they do or not. No one really cares what their kids learn in school anymore unless it is some bullshit thing to do with religion. Complaining parents normally mean quite a bit to schools and school districts and if they don't give a shit you can always go up higher to the department of education.
I see this topic at least every few weeks. Honestly. I want to teach history, but if the shitty-ass No Child Left Behind Act stays here when I'm starting to teach then I'm fucking moving to Europe and teaching English.
Because of NCLB, we get more tests. Everything is dumbed down. Everything. My Physics and history teachers both teach their respective classes in a manner so that we all get good grades but we have to work at it. In my Algebra II class, my dumbass fucking teacher is teaching us scholar students in a way so that it makes the mainstream (the stereotypical not-as-smart kids) class look smarter than us; sadly this is true. I hate how some teachers don't give a shit, I hate how many teachers DO NOT EXPLAIN WHAT THEY'RE FUCKING TEACHING!! Jesus fucking Christ.

My little brother is having trouble finishing Essays because his dipshit English teacher won't actually define to him what an essay is and every night after school I have to help him with his next Essay. He also says the same teacher treats every class like it's University and that she assumes everyone already knows everything.
He's in the 8th grade. Bitch needs to be fired.
All they're trying to do is relate to younger people, turning a usually boring subject into something that can be enjoyed.
We should go back to the 50's where teachers could abuse children who didn't behave. So much good would come from it if you behave. Children would actually start to respect the teacher again. It's annoying whenever I teach guitar, kids come in and just start playing:
I tell them, "Tune your guitars."
"We don't have to listen to you. You can't do anything"
Then it comes performance time and they can't play anything, the parents question me as to why they don't know any songs or basic chords. I can't say anything because the parents believe whatever their kid says more than what I say. You can't persuade a parent either that their kid has done something wrong because they go into denial.
Yes, school is getting stupid, but it's because of the children, not teachers. Teachers try to make stuff cool, but it ends up that no one likes what we do because if we go to textbook learning, everyone dreads that and usually falls asleep.
I'm only a student teacher though, so that might be a reason why I don't get much respect.
Here in Canada (Vancouver to be exact) we have this thing called Planning class, you have to take in grade 10 and 12 in order to pass. They make you do things like record your daily physical activity (DPA they call it) to make sure your keeping fit. WTF I thought P.E. class was the way the government got you to do excersice (I'm not fat by the way). They make you write about your feelings and connecting with your inner self, what a bunch of bullshit right ?
