It really, really depends on whether you're more interested in classic hip-hop or more modern stuff.
If you're interested in classic stuff, the albums AK'z posted are phenomenal albums that every hiphophead has to have listened to. If you're looking for newer stuff, there's a shit-ton more variety.
For classic albums pre-2000, look at the hiphopheads [URL="https://www.reddit.com/r/hiphopheads/comments/1irgch/the_second_round_of_essentials_voting_is_now/"]classic essentials list[/URL]. It's missing a lot of really important albums and it criminally neglects a lot of super-awesome 80's albums (and has zero Run-DMC which is awful), but it has plenty of important and influential albums worth listening to, especially for 90's hip-hop.
If you're looking into more important and influential modern albums that won't sound as dated, check out the [URL="https://www.reddit.com/r/hiphopheads/comments/1imyre/the_first_round_of_essentials_voting_is_now/"]current essentials list[/URL]. This one is arguably worse than the classic essentials list, but it's another good start to give you ideas of what type of hip-hop you like.
There's a fuckton of variety in hip-hop and you really have to look around to find what you like. The only modern album of the last 5 years I'd say is absolutely essential to listen to is Kanye West's My Beautiful Dark Twisted Fantasy - there's plenty of other phenomenal albums like Kendrick Lamar's GKMC and Drake's Take Care, but it really depends on the type of hip-hop you like.

If you liked Madvillainy, listen to Madlib and Freddie Gibbs' collab Pinata. Madlib's production style is similar and it was one of the better albums of 2014.
MF DOOM also collab'd with a new-school rapper named Bishop Nehru for a short album, NehruvianDOOM. I didn't really care for it, but it's worth a listen if you like DOOM.

Death Certificate by Ice Cube,
3 Feet High and Rising by De La Soul,
Brooklynati by Tanya Morgan,
Things Fall Apart by The Roots,
ATLiens by Outkast
But for whatever reason, I think I prefer to listen to individual hip-hop songs on a playlist rather than entire albums.

Really Love is phenomenal, I've definitely played that the most. I like both parts of Back to the Future, too, and Betray My Heart. The entire album is great, though - hardly a bad song on the whole thing.

Agreed. Sugah Daddy and Ain't That Easy have been songs I've returned to quite a bit.
