Its just that in videogames they usually fall back on to stereotypes/massive exaggerations of those traits. Eg; lesbians are represented butch as fuck and are basically a tomboy. Look at a game like borderlands where characters like Moxy, Tiny Tina, Roland and handsome jack. Moxy is ~super slut~, tiny tina is your stereotypical annoying brat, roland is BLACK MILITARY MAN FALL IN SOLDIER and handsome jack is basically "white rich guy and that means he's the antagonist". None of these characters (except maybe Roland) go beyond these simple stereotypes. Then look at the walking dead, especially the protagonists in S1 and S2.

Obviously, there are some pretty major differences in speech between certain groups, but I'd say that's as far as it goes.

There are plenty of games with very well constructed characters. You have to remember that more than anything, open world characters are gonna be different from linear world characters. One has the ability to be easily constructed while the other gets dragged up and down the map. New Vegas has fantastically designed characters, as does Uncharted. Sly Cooper has fantastic characters as does Ratchet and Clank. We do a severe disservice by just remembering what has recently been hailed as 'fantastically written characters'.
I was going to cite Joshua Graham from New Vegas as a great example of a character. Andrew Ryan, James Sunderland, Captain Walker from Spec Ops, Walking Dead did not suddenly bring forth well written video gaems, it's been happening since the 90's
