Earthworm Jim (and EWJ 2 if you wanna, but it's mostly classical and polka) had a great soundtrack by Tommy Tallarico. The Redbook (PC, PS1 and Dreamcast) versions in particular are awesome.

The Neverhood too has a great soundtrack, composed by Terry Taylor. The game itself is entertaining, but extremely hard to find. I'd recommend it if you ever get the chance.

Jet Set Radio Future was my favorite xbox game. Still one of my favorites, and the soundtrack is amazing. The Beastie Boys did a few of the tracks under "The Latch Brothers" and there were a few random artists thrown in as well. I still listen to it from time to time.
