The P-82 would be screwed against a 262. The 82 was an escort fighter/night fighter- low speed, poor maneuverability, and mediocre armament. The 262 would have it for lunch. 163, on the other hand, isn't a good matchup, simply because the 163 was so specialized. Its fuel load, weapons, and flight characteristics were designed to kill bombers and ignore the escort craft entirely. But in a straight-up fight, it would really come down to whether or not the 163 pilot could get a hit on the much slower 82 before running out of ammo or fuel. One hit from that 30mm and it would likely be over.
You gotta realize, what made the P-51 good wasn't that it was maneuverable, or fast, or tough, or well-armed- it was successful in that it had a high ceiling, incredible range, and was cheap, and so could be used en masse to escort bombers. The Luftwaffe suddenly had to deal with dozens of escorts on every single bomber formation, and that's where it developed its reputation.

Cannon armament weren't always better than machine guns. For the most part, cannons had a lower effective range than machine guns, and many aircraft such as the Fw-190 or A6M Zeke used their machine guns to range in enemy aircraft, and then open up with their cannon. 12.7mm M2s used in American fighters were very effective throughout the war.
The Meteor was a great aircraft, but in terms of performance, the He-162 and 262 would give it a run for its money. The Royal Air Force phased them out rather quickly when the Vampire entered service.

It could probably beat the 163 in a turning fight for obvious reasons. Against the 262 though, that would be debatable. The Twin Mustang had longer legs than the P-51, but lacks in terms of maneuverability and some other key aspects of combat performance in a fighter aircraft. Like the Me-110, it did much better as a radar-equipped night fighter than it ever did as a day fighter.

Hey uh, the Fokker Dr.1 just called. The Dr.1 was able to make 180 flat turns, and the maneuver was actually quite common coming from them in the skies over Western Europe during WWI.

Cannons were used because of their much higher destructive potential, as they didn't require convergence to deal significant damage. With machine guns, the only damage they could inflict would be if they got lucky and hit a key component, or if they hit at the convergence distance and put many rounds into a small area. Cannons, on the other hand, did damage no matter where they hit, and were much more effective at destroying the airframe of a target.
Note that the only major power that used almost exclusively MGs were the Americans, and they were almost always wing-mounted. This was a significant disadvantage both in terms of raw power and accuracy, as the maximum range of a wing-mounted gun is about double the convergence distance, while nose-mounted guns have no such limitation. The FW-190A8 mentioned before had four 20mm cannons in the wing root and a pair of MGs in the nose, all in all packing more punch than a P-51, P-40, or even P-47.

One thing the Meteor had over the 162 and 262 was engine reliability. The German jets were plagued with overheating problems, occasionally culminating in engines catching fire if the pilot revved them up too quickly, and had terrible maintenance problems.

P-82 out-turn a 163? The Me-163 was an extremely maneuverable plane, its main problem in that regard was structural weakness at high speeds. The 82 on the other hand was ungainly and unmaneuverable as a fighter.

A 180 flat turn isn't what's depicted in the movie, what happens in the movie is that the plane literally turns 90 degrees (while still moving in the original direction) as the enemy passes by and strafes the oncoming enemy, then completes the turn. Not even a Dr.I could pull that off, it's like a J-turn on steroids.
Of course, I did specify that the maneuver as depicted in the film, which is that turn at 400km/h, isn't doable in any plane. A Dr.I might get close, but it would be lucky to be pushing 150km/h while doing so.
