Then it's underexposed.
You also have a bit of dust in the corner, might want to buy a blower and just dust off your sensor a bit. It's not remotely dangerous and relatively good at getting most dust specs

Second one is super homey and nice, incredibly inviting. Excellent shot. First one though I think could have benefitted from a wider perspective of the whole structure, to me it seems like it would make it more complete of a scene.
I really dig the second one. Kind of like the framing on it and the colors are great. I agree with Trogdon, the first shot might have been even better if we could see more of the structure. Just recently got my first DSLR (Nikon D3200), and took a bunch of shots on a trip to New York City today. I am a complete beginner, but I do think these turned out nice. For a complete beginner they're not too bad, actually. You seem to know what to shoot and when, but I'm not sure if that's happy accident or good timing and appreciation of light (I'll give the benefit of the doubt). For portraits try not to clip off parts of the head, unless you're making a point of reference for a certain body feature or expression. The only problem with the first two is your zooming. You should have gotten either closer (To remove the sign) or further away to include it as a contrast (Red is a good color to add contrast, especially if you brighten the reds in post production) The street vender could have been much more dramatic if you made him the main point if interest by zooming/moving closer to him. Moving your angle to remove the hotdog stand and more of him interacting with the crowd - but that's not an easy thing to do as a beginner. However, the atmosphere is solid and the colours are lovely. The composition is wonky, but you seem to have an eye for knowing exactly what makes the frame interesting. A respectable start - especially as you didn't decide to post macros of flowers and bits of fence! (Like me!)

Haven't gotten out and done any shots lately. I just need to go out and start snapping stuff. Last stuff I did was on Thanksgiving when I went and saw family but the shots I got were all so "meh" in terms of composition, lighting, etc so it's almost like they just can't be edited in any possible way to make them look even remotely decent... It's really de-motivating

I appreciate th thought behind it and that you showed it to us but to me they all look like not enough effort has been put into them. Just nothing outstanding at all, yet nothing "daily" enough to justify a "taken out of the ordinary"-framework. Just a very .... vanishing ... middleground.
