Tonsilloliths, apparently. According to Wikipedia they're little globs of calcium that build up in the folds around your tonsils. Usually harmless unless they're large, but they smell horrible and feel like you have food caught in your throat. Many people with frequent cases of tonsillitis get them, so that may explain why you got them removed.
