I kind of would like a show where Gordon Ramsay teaches someone like Shane to become a decent cook. I feel like most cooking shows overlook small mistakes that most of us do.

You don't need to be a chef or even a good cook to know how to dice or crack an egg, this is basic stuff. Properly cracking the crab is the hardest part. Sure it might take you longer than Gordon himself but atleast you won't have 2inch peppers sticking out of the crab.
I think the whole point of the video was for him to be really bad, for comedic effect? Everyone and their granny knows how to dice reasonably well, but he had massive chunks of pepper with all the rind on it still. It was for goofs and gaffs.

Obviously it takes skill to do it as fast as Ramsay but if you're an "amateur" cook it really isn't that hard to learn. Learning how to properly cut vegetables is the first thing you learn in a kitchen. Give it a try yourself and you'll be doing it decently fast in a few days. I wouldn't call this guy an amateur cook because that would imply he has some knowledge on cooking. The fact he tried to make a patty and made a salad shows it, not to mention the whole egg thing. Making the crab patty is exactly like making a hamburger patty, if you didn't dice the peppers in a hamburger patty you would have the exact same mess.

I always thought dicing was the same as cubing too, and I wouldn't consider myself a terrible cook. I did learn something new though.

Dicing is cutting into small cube shapes. Dicing is essential for hamburger, crabcakes, etc. as it helps bind the meat together (along with the egg and breadcrumbs) so it won't fall apart while cooking. Not only that it also allows for the food to cook quickly and evenly. Plus it looks nicer and distributes the flavor more evenly throughout your dish.
