You make a really good point. Our idea starting out was to stick to game soundtracks we were very familiar with, mainly since both of us are quite busy outside of this Youtube project. Beyond that, we wanted to make sure that we focused on a niche (Nintendo covers, in this example) enough to provide some aspect of consistency to the channel. Smooth McGroove is someone we look up to immensely, and it is always nice to see him cover relatively more niche stuff in comparison (the Ace Attorney soundtrack, for example). We are definitely hoping to do stuff like that in the future, when time opens up and when we have a bit more flexibility in exploring. Thank you so much for the feedback!
Rainboo: Yes, it is a baby model! I never found any difficulty in adjusting to it from a full sized guitar. I've actually found it to be a very easy guitar to handle and play, all in all. We have mics off camera that we use to pick up the guitars. Thanks a lot for the feedback and kind words!

Great question! Breaking a track into individual guitar parts usually involves us trying to divide the lead section from the chords/background section. Once we've transcribed these two parts, we try to make sure that our cover has enough variety in it, and it it isn't just lead and chords. As in, we try to throw in a couple of sections where we harmonize with each other, or sections where we throw in some fingerpicking (an example would be our Traverse Town cover, where I play a finger-style version of main theme + the chords, while Dani plays the lead an octave higher, which had a kind of neat sound to it). To put it simply, having an idea of one guitar helming the lead, and another helming the background, is a nice way to start and to then flesh out and properly include some of the nuances of a piece. The most 'accurate' cover we've probably done is our take on the main theme from Yoshi's Woolly World, and in that cover particularly, we transcribed the background bass line and the main lead, and broke it up between our two guitars. In essence, we try to do as much as we can with two guitars while still covering what the tune is. I don't want to make it sound more fancy than it is however- we generally just try our best to make sure it sounds like the tune we covered. (edit: if that sounded scatterbrained, and you want me to walk through a particular cover we did and how we figured/broke down the notes, I can do so!)
Excuse my use of (probably) incorrect terminology. It's been a while since I learned theory, and I can't say I've been the best at refreshing and keeping up with it.

Glad you like it! insaneintherainmusic is a huge inspiration to us, and yes, we are very open to collaborating in the future. At the moment, we (unfortunately) have way too much going on in our lives to have the time to work through collaborations. It's something we want to look into seriously somewhere near late next year. Our hope is to do something where a collaboration is warranted (either we can add something to someone else's cover, or vice-versa) and where we think we can do something cool with it. Long story short, we would've already done some if we weren't so pressed for time as is. We've had to record two covers ahead of time just due to conflicting schedules (due to work + school/travelling).
