I have a chain of chest rooms on the server I play on, I filled them with every useful resource there is, put tons of unavoidable and unobvious TNT traps in the way, you have to dig around if you want to get in. Also multiple everything-proof obsidian safe boxes.
Alternatively, you could just find a server that doesn't have morons who steal things from chests.
