I'd go £2500-3000, that's a decent value factoring the expenses paid and you'll probably pay the assistant out of that. Still making a fair bit and it will be a lot of fun!
One of my friends did a wedding shoot in the Bahamas and they didn't pay much outside of the fare (plane tickets and stay was well over $3k though), so getting money in addition is pretty good.
You can fly me out if you want, I'm a good assistant ;)
