Well over 2 years i'm guessing she has had a chance to get to know you fairly well.
A lot of it is because of the "love at first sight" stereotype though which makes people think initial infatuation is true love.

So my girlfriend is currently texting me and I think she's trying to convince me to have sex with her tomorrow. I say "I think" because she's really shy and nervous about saying anything even remotely sexual. We were talking about messing around (something we already do pretty regularly) but we've never gone all the way. Now she keeps asking if I want to "do something new."
The thing is I'm a virgin (she isn't), and up until dating her I've never even gotten as far as making out with anyone. I'm nervous as hell but I don't want to disappoint her or something by just playing dumb or flat out saying "no."
