Well lets say you want to live for 50 years , you drink about 1,5l a day , that makes
50x365x1,5=410625 litres.
Then you use 150 litres a week for other things ( washing and shit )
50x365/7*150=391071 litres
Well add another 1000 litre just in case and that adds up total
802696 litres just for you !
Build it in a mountain, near an underground water source (a fully underground source would have very little fallout, but purify it anyway), an air filtration system along with a geothermal generator system for power. And build it in one big faraday cage to reduce interference from possible EMPs, with a smaller room outside that for radio communications.
Also, isolate it with spacers from the "foundation" to reduce damage from shockwaves (earthquakes, etc.)
I'd find a nice concrete building, give it a cosy interior and sit out on the roof playing guitar and enjoying the peace.

There have been many nuclear bomb tests during the cold war, but only in places where fallout clouds could not go far enough to hit anyone important.
