Bebop is probably one of the best Animes hands down. Amazing animations, writing, VA(both jap and english are great) great characters, one of the best show OSTs, and it doesnt overstay its welcome or waste your time.
Even if you dont like Anime id say it would be pretty hard to hate Bebop if you watched it.

The 80s? It started airing in 1998.
Cowboy Bebop is one of those shows that could have been made in any medium but it just happens to be an anime. Same goes for shows like Ghost in the Shell, Baccano!, Psycho-Pass, and a bunch of other anime. Cowboy Bebop is just super fucking standout, practically the cornerstone of cornerstone anime.

Excuse me if I come off as ignorant towards anime, but I have said this a million times. If every anime was the same quality and had the same coolness factor as cowboy bebop I would be a massive weeb. Most anime just makes me cringe now.

Yeah.
The show is quite unique for science fiction and the characters are very well written. It's one of those shows where you could watch them do almost nothing important and it'd still be interesting.
In fact, there's one or two episodes that do just that and it's fantastic.
