The Sovereign Citizen community has an even more detached from reality cousin movement called Freemen on the Land (FOTL). They mix a big bundle of tax protestor stupid in.
One thing both groups have in common is that there are entire communities online encouraging people to resist the authorities according to self-serving massive misinterpretations of law text, purposefully regurgitating this bs to ignorant people looking for some way to push back against the system. In the case of FOTLers, this has included things like deciding not to pay the rest of the mortgage and just claiming the bank has no right to "your" land all of a sudden - homes that've been in the family for 90 years have been lost over this stupidity.
And another thing they have in common is that the prospective tax cheat is told THIS ALWAYS WORKS and really does a lot to fill the sucker with a feeling of empowered confidence -- like they've finally unlocked the secret, and this must be what successful rich people did (not, you know, hard work, talent, all that stuff these shmucks want to skip).
And then when it blows up in their face and they're arrested, charged, convicted, and jailed/otherwise punished, the community casts them out and blames them for not doing it right, because it ALWAYS works unless you do it wrong. The goalposts don't get moved so much as the victim made an unperson.
And, of course, a small number of people have made big money in doing speaking tours on how to get everything you want by being a SovCit, and they embrace the "I'm right, you just did it wrong" line for obvious reasons. This is what spread it. There are books about it out there, although some of the authors have been convicted of various crimes related to their own personal lawbreaking and advocating others to commit criminal acts (by refusing to pay taxes, for example).

Now, I'm not saying that this makes up the majority of sovereign citizens in the US, but it definitely makes up a pretty good chunk of them. Not everything. But the police do have a lot of forcefull compliance aproaches at their disposal. In some cases though, these are not physical but legal.

Generally if that happens, you request that the officer list a probable cause, that you disagree with said reasoning and wish to have it in protocol. Then you let him conduct his search. Once it turns out nothing you can file a formal complaint listing said protocol, how you disagreed with the reasoning of probable cause in this event and how the officer was clearly overstepping.
A lot depends on what a vehicle may be considered as well. In some legalities, if you are occupying a vehicle it counts almost the same as an inhabited area. As such they can detain the vehicle but not enter without a court doc unless you consent.

I respect and love cops and honestly want to do that job, but it's fairly sound advice never to consent to a search under normal circumstances.
This doesn't mean fight them or fail to comply with orders, just make it clear you aren't consenting. Exactly as you said, if it turns out the search is illegal, any evidence they found as a result of it won't be admissible.
Wanna fight the police? Do it in court.
Or don't do anything illegal and just consent to the search instead of giving them a hard time and not worry about the search. Just sit there and have a decent time chatting with an officer in the mean time.

I think both are perfectly valid approaches to police. If the officer's being a dick about it (and I reckon they can be real dicks), fight him legally. If they're polite and nice, just don't mind it. Why? He'll still do it, so you're not winning anything, just losing more time for pretty much nothing.
If an officer asks for your license/insurance/registration and you are in a vehicle you are required to provide it. While you do have the right to travel you do not inherently have a right to any particular method of travel and must comply with any stated/posted regulations as well as provide proof of said compliance when requested by an officer of the law and refusal to do such constitutes probable cause for search or seizure.
Also, whether or not you believe a law is unconstitutional does not matter, if it's on the books you will be arrested for failing to comply with it, if you believe it is unconstitutional then you may argue such at your trial, and your perceptions of any law's constitutionality will not change the fact that resisting or impeding law enforcement officers will also result in arrest and/or charges.

And it's shit like this that makes me understand why cops are so on edge. They never have any idea if something routine is going to turn into a threat against their life or the lives of others.
My dad is a jail guard and from what his buddies have told him, the two most dangerous types of encounters for any regular officer are traffic stops and domestic disturbance calls. Seeing this shit makes me know why.
