Hopefully they can avoid this or play it off cleverly, there are way more interesting nazi's than hitler

IIRC, the writers just pick and choose what they want out of the previous stories.

I consider the current canon timeline to have started with Return to Castle Wolfenstein, since that's where Blazkowicz meets Deathshead for the first time. Any game before that is fair game.

Personally I have no problem with that but I've seen a lot of people consider it semi non-canon because of the fact it's been removed from sale as well as the general negative opinion of it among wolf fans.
I'm pretty sure The Old Blood is supposed to be a kinda sorta remake of Return to Castle Wolfenstein.
If we're being strict, I think you should probably consider The New Order and The New Colossus to be in their own distinct timeline, with a lot of story elements borrowed from other Wolfenstein games.
