For Joel go to the Vargskelethor youtube, his Arcade/NES/et cetera Madness video are always great. The OS destructions are quite popular, and can be fairly funny, but I find they get a bit stale, especially back to back. His Sims videos are also pretty great. I'm not very familiar with the others so much, though Direboar's playthrough to the Jurassic Park: Trespasser game I really enjoyed, and RevScarecrow's King's Quest 5 audio glitch playthrough is a lot of fun (King's Quit).
Streams it is a lot harder to say because it really depends on your taste, since you'll have to sit there for what can be quite a bit of downtime or trouble shooting or just general basic gameplay where the commentary may not be quite as interesting. You kinda have to just start picking through full streams for each and trialing them for a bit.
Joel's Dwarf Fortress videos are pretty grand, along side the the IVAN playthroughs. (Part 3 is golden)

I'd like Joel to do something like Boatmurdered in that fans pass around a save while doing stuff with it and documenting what happens, and once a week Joel would pick up the save and progress further with what exists only for it to be circulated again and again until the fort dies in Joel's hands. I think it would possibly even surpass Boatmurdered. It would be a logistical nightmare honestly, with hundreds of different incarnations of the saves. Maybe hand it around between mods or other streamers instead?

Edit: Also to further recommend streams, Joel's stream of Undertale is my favorite playthrough of the game, and also introduced me to the game itself. There are so many great moments and Joel loved playing it so its a good watch.

Marathoned that pupper for about 16 hours yesterday so i could.
KY did it, he beat TowerClimb's Legend Fragments challenge. It's one of the more insane video game challenges out there, I think hes the second one to do it, even though he did it on easy which gives you one extra life and lives cost half of what they usually do.
