What I'd love to see from Joel is Star Control 2. It's a weird, quirky game and it's a tad complicated from the start, but seeing how he handles Dwarf Fortress he'd have no issue. I'm also sure he'd love it, since the aliens are all really fun and interesting to interact with
Not to mention any more reasons to listen to Star Control 2's soundtrack is fine by me.
